Chicken And Zucchini Parmesan
- 8 oz. vermicelli
- 1 jar spaghetti sauce
- 2 Tbsp. grated Parmesan
- 1 Tbsp. flour
- 2 medium zucchini, cut into 1-inch pieces
- 1 lb. chicken breasts, cut into 1-inch pieces
- 2 Tbsp. seasoned dry bread crumbs
- 1/4 to 1/2 c. shredded low-fat Mozzarella
- Combine 1 tablespoon Parmesan and flour.
- Toss zucchini and chicken pieces in it, then place in microwave-safe casserole. Cover and cook on High for 5 minutes, stirring once.
- Combine 1 tablespoon Parmesan and crumbs.
- Sprinkle over chicken.
- Cover with paper towel and cook 2 minutes.
- Spoon 1/2 cup spaghetti sauce over crumbs and sprinkle cheese over sauce.
- Cook, uncovered, about 2 minutes until chicken is done and cheese is melted.
- Serve with vermicelli and remaining sauce.
