Pink Lemonade Pie
- 1 envelope unflavored gelatin
- 1/4 c. cold water
- 1 (6 oz.) can frozen lemonade concentrate, thawed (undiluted)
- 3/4 c. sugar
- 1 c. evaporated milk, chilled
- red food coloring
- 1 (9-inch) pie crust shell, baked
- Sprinkle gelatin over cold water and undiluted lemonade concentrate in saucepan.
- Place over low heat.
- Stir constantly until gelatin dissolves, about 5 minutes.
- Remove from heat.
- Add sugar and stir until dissolved.
- Chill, stirring occasionally, until completely cooled.
- Pour chilled evaporated milk into chilled mixing bowl; beat at high speed of mixer until stiff, about 5 minutes.
- Fold in cooled gelatin mixture.
- Add a few drops of food coloring to make pink.
- Put in crust.
- Chill for about 2 hours.
