New York Cheesecake
- 1 c. finely crushed graham cracker crumbs
- 1/4 c. melted butter
- 6 eggs, separated
- 1 1/2 c. sugar
- 19 oz. cream cheese
- 1 pt. sour cream
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1 tsp. vanilla
- All ingredients should be at room temperature.
- Grease a 9-inch spring-form pan.
- Mix butter and graham crackers well.
- Reserve 1/4 cup for garnish.
- Press firmly on bottom of pan.
- Set aside.
- Mix cream cheese, sugar and salt.
- Add egg yolks, one at a time, beating after each addition.
- Add flour, sour cream and vanilla. Mix well.
- In separate bowl, beat egg whites with 1 teaspoon cream of tartar and gradually add 3 tablespoons sugar and beat until stiff.
- Fold egg whites thoroughly into cheese mixture and pour mixture into pan.
- Sprinkle remainder of crumbs on top.
- Bake at 350u0b0 for 1 hour and 15 minutes.
- Turn off heat.
- Open door; leave for 15 minutes.
- Cool before removing from pan.
