New York Cheesecake

  1. All ingredients should be at room temperature.
  2. Grease a 9-inch spring-form pan.
  3. Mix butter and graham crackers well.
  4. Reserve 1/4 cup for garnish.
  5. Press firmly on bottom of pan.
  6. Set aside.
  7. Mix cream cheese, sugar and salt.
  8. Add egg yolks, one at a time, beating after each addition.
  9. Add flour, sour cream and vanilla. Mix well.
  10. In separate bowl, beat egg whites with 1 teaspoon cream of tartar and gradually add 3 tablespoons sugar and beat until stiff.
  11. Fold egg whites thoroughly into cheese mixture and pour mixture into pan.
  12. Sprinkle remainder of crumbs on top.
  13. Bake at 350u0b0 for 1 hour and 15 minutes.
  14. Turn off heat.
  15. Open door; leave for 15 minutes.
  16. Cool before removing from pan.
