Company Coming Potato Casserole(100 Year Old Recipe. One Of President Lincoln'S Favorites)
- 8 medium potatoes, peeled and diced
- 8 Tbsp. butter (or half margarine)
- 6 Tbsp. flour
- 2 c. heavy cream (half and half)
- 1 c. grated sharp cheese
- 1/2 c. fine bread crumbs
- pepper and salt to taste
- 2 c. rinsed pinto beans
- 2 to 3-inches water in kettle
- 1/2 c. brown sugar
- 1/2 c. white sugar
- 1 tsp. mustard
- 1 tsp. ground ginger
- dash of pepper
- 1 onion, minced
- 1/4 c. molasses
- dash of catsup
- 4 to 6 green tomatoes
- 1 egg, beaten
- 1 c. flour
- 1/2 c. butter
- sugar
- salt and pepper
- Slice unpeeled tomatoes 1/2-inch thick.
- Dip each slice into beaten egg, then flour.
- Fry in butter until lightly brown on each side.
- Stack in casserole, 3 to 4 slices high, sprinkling each slice lightly with sugar, salt and pepper.
- Bake at 350u0b0 for 30 minutes.
