Sweet Green Tomato And Corn Piccalilli

  1. Rub tomato slices with salt and allow to stand covered overnight in refrigerator.
  2. Squeeze tomato slices between layers of cheesecloth to remove excess moisture.
  3. Set aside.
  4. In a large sauce pan, combine vinegar, sugar, cloves and cinnamon.
  5. Bring to a boil.
  6. Remove from heat.
  7. Add reserved tomatoes, stir well.
  8. Add the remaining ingredients and mix thoroughly.
  9. This will keep well, covered and refrigerated, for several weeks.
