Green Chili Enchilada Casserole
- 1 lb. ground beef
- chopped onion
- chopped bell pepper
- 10 to 12 corn tortillas
- 1/4 c. butter
- 1/4 c. flour
- 1 c. milk
- 1/2 to 1 lb. Velveeta
- 1 small can diced green chilies
- In large skillet, cook beef with onion and bell pepper.
- Set aside.
- Heat tortillas, one at a time, until soft.
- Set aside and keep warm.
- In medium saucepan, melt butter.
- Stir in flour until smooth and add milk.
- When milk and flour are hot, add Velveeta and green chilies.
- When smooth, arrange tortillas in casserole dish; one at a time, fill with ground beef and grated Cheddar or Colby cheese.
- Roll each one.
- When casserole pan is full, pour sauce over tortillas.
- Cover tortillas with sauce and bake at 350u0b0 for 10 minutes.
