Rich, Healthy Raisin Bran Muffins

  1. Preheat oven to 350. Spray a large six-miffin tin with non-stick cooking spray. In mixer beat egg, slowly adding honey and sugar. Reduce speed, add oil and milk. Add salt, baking powder and soda followed by raisins, flour, bran and cereal. Mix just to combine. Fill tins 3/4 full, and press extra cereal on top. Bake 20-25 minutes, or until knife insterted comes out clean. Cool.
