Homemade Vegetable Soup
- 1 chicken bouillon cube
- 1 beef bouillon cube
- 1 medium onion
- 1 qt. tomatoes
- 1/4 head cabbage
- 1/2 pt. can corn
- 1/2 pt. English peas
- 1 bell pepper
- 1 c. okra
- 1 lb. stew beef, cooked
- 4 medium carrots
- 4 medium diced potatoes
- 2 stalks celery
- In a large Dutch oven add the bouillon cubes, carrots, onions, tomatoes, cabbage, corn, peas, bell pepper, okra, potatoes, celery and cooked stew beef. Add 2 cups water.
- Bring to a boil.
- If more water is desired, add.
- Reduce heat to simmer and add 1 teaspoon black pepper, pinch of oregano, salt, garlic to taste, 1 bay leaf and a teaspoon of chili powder.
- Cook until carrots and potatoes are done.
- Serves 8.
