Puerto Rican Arroz Con Gandules(Rice With Pigeon Peas)
- 4 c. white rice (preferably long grain)
- 5 c. water
- 1 can gandules verdes (pigeon peas)
- 4 Tbsp. vegetable oil
- 1 small medium onion, finely chopped
- 1 small green pepper, chopped
- 5 small sweet peppers, chopped
- 1 1/2 packet sazon seasoning
- 8 reco leaves, chopped with stems removed
- 2 or 3 chorizo sausage, sliced
- 2 Tbsp. stuffed green olives
- 1/2 tsp. chopped garlic
- 1/4 c. sofrito or recaito
- 1/2 c. tomato sauce
- 1/2 tsp. oregano
- 1/4 tsp. black pepper
- 2 tsp. adobo
- In a large saucepan or rice pot, heat oil.
- When oil is hot, saute onions, then add peppers, reco leaves and chorizo. Saute until chorizo is brown.
- Add olives, garlic, sofrito, sazon and tomato sauce.
- Add rinsed rice and water. Add black pepper, oregano and adobo.
