Corned Beef With A Plum Glaze (Slow Cooker)
- 1 1/2 kg piece corned beef, rinsed (silverside)
- 1 large onion, quartered
- 1 large carrot, sliced thickly
- 2 tablespoons red wine vinegar
- 2 tablespoons brown sugar
- for the plum glaze
- 1/2 cup bottled plum sauce (I used Barkers)
- 2 tablespoons red wine vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato ketchup
- Place the first five ingredients in to a large slow cooker, then pour over enough cold water to cover meat.
- Cook on low for 7-9 hours or high for 4-6 hours until meat is tender.
- Remove meat when cooked and put on serving plate.
- Pour the plum glaze over entire piece of meat and slice to serve.
- Plum Glaze.
- Combine all ingredients for the plum glaze in a small saucepan and bring to the boil.
- Let simmer for 2-3 minutes to reduce to a thick glaze.
- Pour over meat before slicing.
