Ground Meat Soup
- 1 1/2 lb. ground meat
- 1 c. chopped celery
- 1 c. chopped carrots
- 1 c. chopped raw potatoes
- 1 medium size onion, chopped
- 1 can Great Northern beans or kidney beans
- 1 can cooked spinach
- 2 eggs
- 1 heaping Tbsp. parsley
- 1/2 c. grated Italian cheese
- 1 can pizza sauce (any kind)
- water
- salt and pepper to taste
- Mix (as in meat loaf) meat, vegetables, eggs, cheese and parsley together in a large pot.
- Slowly run cold water down the side of the pan so as not to disturb meat mixture and cover meat with water.
- Heat pot to slow boil and start to break up meat mixture with large spoon in bit size pieces.
- Add pizza sauce, canned beans (juice and all), spinach (chopped and drained) and season to taste.
- Cook for 1 hour or when vegetables are tender. Add cooked pasta of your choice (large or small shells are nice).
