Tex Mex Vegan Chili
- 2 tablespoons olive oil
- 1 1/2 cups chopped onions
- 6 garlic cloves
- 2 tablespoons pickled jalapeno peppers, rinsed and squeezed
- 1 tablespoon cumin
- 2 teaspoons oregano
- 1/2 teaspoon cinnamon
- 1 pinch ground cloves
- 1 teaspoon ground coriander
- 1 tablespoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt, to taste
- 2 (14 1/2 ounce) cans black beans, rinsed and drained
- 2 (14 1/2 ounce) cans stewed tomatoes
- 2 (14 1/2 ounce) cans sweet corn
- 1 ounce baker's chocolate
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- Saute onions and garlic in olive oil until soft and starting to carmelize.
- Add spices, jalapenos and stewed tomatoes, simmer for 5 minutes.
- Using an immersion blender, grind this mixture until smooth (optional).
- Add beans, corn, chocolate, lime juice & soy sauce.
- Simmer for 20 minutes.
