Low Calorie Chocolate Cream Pie
- 1/3 c. sugar
- 1/4 c. cornstarch
- 3 Tbsp. European style cocoa or unsweetened cocoa
- 2 c. cold skim milk
- 1 tsp. vanilla extract
- 8-inch (6 oz.) packaged graham cracker crust
- frozen nondairy whipped topping, thawed (optional)
- fresh fruit (optional)
- In large microwave-safe bowl, stir together sugar, cornstarch and cocoa; gradually stir in milk.
- Microwave at High 2 minutes; stir well.
- Microwave at High 2 to 5 minutes or until mixture just begins to boil; stir well.
- Microwave at High 30 seconds to 1 minute until mixture is very hot and thickened.
- Pour into crust. Place plastic directly onto surface; refrigerate several hours or until firm.
- Garnish with whipped topping and fresh fruit, if desired.
