Almond Joy Cake
- chocolate cake mix
- 3 bags frozen coconut
- 12 large marshmallows
- 1 c. sugar
- 1 c. milk
- 1 1/2 tsp. vanilla
- 2 c. sugar
- 1/4 c. cocoa
- 2/3 c. milk
- 1 stick margarine
- 1 tsp. vanilla
- 1 Tbsp. peanut butter
- Make chocolate cake mix according to package.
- Make 4 layers. Combine coconut, marshmallows, 1 cup sugar, 1 cup milk, and 1 1/2 teaspoons vanilla.
- Boil 5 minutes after marshmallows melt.
- Set aside to cool.
- Combine 2 cups sugar, cocoa, 2/3 cup milk, margarine and 1 teaspoon vanilla.
- Boil 2 minutes, stirring constantly.
- Remove from heat and pour in small glass bowl and beat for 3 minutes.
- Add 1 tablespoon peanut butter.
- Beat 2 more minutes.
- Put filling between layers and icing on sides and top.
