Farmer'S Market Vegetable Bowl
- 2 small sweet red peppers
- vegetable cooking spray
- 2 tsp. olive oil, divided
- 2 c. sliced zucchini
- 1 small onion, sliced
- 1/2 c. thinly sliced carrots
- 2 cloves garlic, crushed
- 12 cherry tomatoes, halved
- 1 1/2 Tbsp. minced fresh basil
- 1 c. frozen egg substitute, thawed
- 2/3 c. all-purpose flour
- 1/2 c. skim milk
- 1/4 tsp. salt
- 2 oz. Feta cheese, crumbled
- Cut sweet red peppers in half lengthwise; remove and discard seeds and membranes.
- Place pepper, skin side up, on a large baking sheet; flatten with palm of hand.
- Broil 5 1/2 inches from heat 12 minutes or until charred.
- Place peppers in ice water; chill 5 minutes.
- Remove from water; peel and discard skins.
- Cut into thin strips and set aside.
