Turkey Noodle Soup
- turkey carcass
- 5 qt. water
- 1 c. celery
- 1/2 c. celery leaves
- 1 c. onion
- 7 chicken bouillon cubes
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/2 c. parsley
- 1 bay leaf
- 1 c. peas
- 1 c. sliced carrots
- 1 c. green beans
- 4 c. (8 oz.) fine noodles
- 1/4 c. butter
- 1/4 c. flour
- Place turkey, water, celery, onion, bouillon, salt, pepper and bay leaf in large kettle. Cover and simmer about 1 hour. Remove carcass.
- Add carrots, peas and green beans.
- Simmer about 10 minutes.
- Add meat from carcass.
- Heat soup. Add noodles and cook 10 minutes.
- Melt butter in small pan. Add flour and stir constantly until flour is browned. Stir into soup. Boil 5 minutes.
