Lobster Thermidor

  1. Heat oven to 450 degrees.
  2. Saute onion and mushrooms in olive oil.
  3. Blend in xanthan gum and seasonings.
  4. Cook over low heat until bubbly.
  5. Remove from heat and stir in milk, chicken broth and Worcestershire sauce.
  6. Bring to boil, stirring constantly.
  7. Boil 1 minute.
  8. Add egg yolk, flavoring and lobster.
  9. Place mixture in shell of lobster or individual baking dishes and sprinkle with 3 tablespoons fine buttered cracker or dry bread crumbs.
  10. Bake 5 minutes.
