Fruit Pie(Makes 2 Pies)
- 1 can red tart cherries, drained (save juice)
- 1 small can crushed pineapple, drained
- 2 c. liquid
- 7 Tbsp. cornstarch
- 1/2 tsp. salt
- 1 Tbsp. red food coloring
- 2 c. sugar
- 1 tsp. vanilla
- 1 c. chopped nuts
- 6 bananas, diced and add lemon juice to keep from turning brown
- 1 (8 oz.) carton Cool Whip or 2 c. whipped cream
- 2 baked pie shells
- Drain cherries and pineapple and add enough water to make 2 cups liquid.
- Add cherries and pineapple.
- Stir in sugar, cornstarch and salt.
- Cook until thick.
- Set aside to cool.
- Then add food color, vanilla, chopped nuts and diced bananas.
- Stir until blended.
- Pour into 2 baked pie shells.
- Top with Cool Whip or whipped cream.
