Crabmeat-Macaroni Salad
- 1 (8 oz.) pkg. elbow macaroni
- 1 c. crabmeat
- 1/2 c. shredded cabbage or 1 c. carrots
- 1 c. diced cucumber
- 1 c. celery, diced
- 1/4 c. onions, thinly sliced or chopped
- 1/2 c. green pepper, thinly sliced or chopped
- 1 small jar pimento, cut into strips
- 3 hard-cooked eggs, sliced
- salt and pepper
- mayonnaise or salad dressing
- Boil the macaroni fast, as directed on package.
- Drain and chill.
- Flake the crabmeat; combine with macaroni, cabbage or carrots, cucumber, celery, onions, green pepper, pimento and eggs. Season to taste with salt and pepper.
- Mix with mayonnaise or salad dressing.
- Garnish with thin slices of tomatoes and radishes.
- Chill for at least 1/2 hour.
- Serves 6.
