Special Mexican Casserole
- 1 lb. ground meat
- 1 large bell pepper (half red and half green)
- 1 large onion
- 3 Tbsp. chili powder
- 1/2 tsp. red pepper
- garlic salt to taste
- 1 can Ro-Tel tomatoes with green chilies
- 1 can cream of mushroom soup
- 1 can refried beans
- 1/2 c. milk
- 1 c. sharp Cheddar
- 1 c. Monterey Jack cheese
- 2 small jars (medium or hot) picante sauce
- chips
- Brown ground meat with bell peppers, large onion, chili powder, red pepper and garlic salt.
- Mix Ro-Tel tomatoes, cream of mushroom soup, refried beans and milk.
- Add to meat mixture and mix.
- In a casserole dish, layer chips (any kind).
- Pour meat mixture over chips and mix.
- Add cheeses and picante sauce over dish.
- Bake at 350u0b0 until bubbly.
