Jalapeno Shrimp Saute
- 2 sticks unsalted butter
- 2 medium fresh jalapenos, stemmed and minced
- 3 medium garlic cloves, peeled and minced
- 1 1/2 lb. unpeeled medium shrimp
- 1/2 c. chopped scallions (including green tops)
- 1/2 c. dry white wine
- 1/2 Tbsp. Worcestershire sauce
- 1 tsp. salt
- In a large skillet over medium heat, melt butter.
- When it foams, add the jalapenos and garlic.
- Lower the heat and cook, stirring occasionally, for 5 minutes.
- Add the shrimp and scallions; raise the heat to high and cook, tossing and stirring, until the shrimp turn a bright pink-orange and have curled, about 5 minutes.
- With a slotted spoon, divide the shrimp among individual serving dishes.
- Add the wine and Worcestershire sauce to the skillet; bring to a boil and cook, stirring, for 3 minutes. Stir in the salt and pour equal amounts of the sauce over the shrimp in each dish.
- Serve at once.
