Linguine With Vegetables And Provolone
- 1/2 lb. linguine or angel hair pasta
- 2 Tbsp. butter or margarine
- 1 garlic clove, minced
- 2 green onions, chopped
- 2 small zucchini, thinly sliced
- 1/4 lb. mushrooms, sliced
- 1 medium tomato, peeled and chopped
- 1/2 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. shredded Provolone cheese
- 3 Tbsp. grated Parmesan cheese
- 2 Tbsp. chopped fresh parsley
- In a 3-quart saucepan, bring salted water to a boil. Add pasta.
- Cook 11 minutes.
- Drain and return pasta to saucepan. Melt butter in large skillet over medium heat.
- Add garlic, green onions, zucchini and mushrooms.
- Saute 2 minutes.
- Add tomatoes, basil, salt and pepper.
- Simmer 3 to 4 minutes. Add vegetables and cheese to pasta.
- Gently sprinkle with parsley.
- Serves 4.
