Dolmadesstuffed Vine Leaves

  1. Mix rice, mint, meat, tomatoes, onion and salt and pepper; place a small amount (about the size of a pecan) on each grape leaf and roll up.
  2. (Keep in mind that rice will swell when cooked.)
  3. Place in pan with 6 to 8 open leaves on top to prevent stuffed leaves from drying out.
  4. Cover with water, oil and lemon juice.
  5. Cover and cook over low heat for 45 to 60 minutes.
  6. Crock pots work well but take longer cooking time.
  7. Stuffing can also be used for peppers and tomatoes.
  8. Serve as hor's D'oeuvers or vegetable dish.
  9. Goes good with a light lemon sauce.
