Dolmadesstuffed Vine Leaves
- 1 can or jar of grape leaves
- 1 cup, uncooked rice
- 12 leaves of mint, chopped (parsley will do)
- 1 lb. hamburger or ground turkey
- 1/2 cup, canned tomatoes, crushed
- 1 medium onion
- Salt and Pepper to taste
- 1/3 cup, olive oil
- Juice from one lemon
- Mix rice, mint, meat, tomatoes, onion and salt and pepper; place a small amount (about the size of a pecan) on each grape leaf and roll up.
- (Keep in mind that rice will swell when cooked.)
- Place in pan with 6 to 8 open leaves on top to prevent stuffed leaves from drying out.
- Cover with water, oil and lemon juice.
- Cover and cook over low heat for 45 to 60 minutes.
- Crock pots work well but take longer cooking time.
- Stuffing can also be used for peppers and tomatoes.
- Serve as hor's D'oeuvers or vegetable dish.
- Goes good with a light lemon sauce.
