Peanut Butter Brittle
- 2 (12 oz.) c. peanut butter chips
- 1 1/2 c. margarine
- 1 3/4 c. sugar
- 3 Tbsp. light corn syrup
- 3 Tbsp. water
- 1 1/2 c. coarsely chopped peanuts
- 1/2 c. chocolate mini chips (real chocolate)
- Lightly butter 9 x 13-inch pan.
- Spread 1 cup peanut butter chips evenly over bottom of pan; set aside.
- In 2 1/2-quart pan, melt butter; add sugar, corn syrup and water.
- Cook over medium heat, stirring constantly to hard crack stage (300u0b0 to 310u0b0). Remove from heat; stir in peanuts.
- Immediately spread mixture evenly into prepared pan, being careful not to disturb chips. Quickly sprinkle remaining peanut butter chips and chocolate chips over candy.
- Cool completely.
- (I put it in refrigerator).
- Break into small pieces and store in tightly covered container.
