Health Cookies
- 1 c. granulated sugar
- 1 c. shortening
- 1 Tbsp. vanilla
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. firmly packed brown sugar
- 2 eggs
- 2 c. flour
- 1/2 tsp. baking powder
- 1 c. quick cooking oats
- 1 c. All-Bran cereal or bran flakes
- 1 c. corn flakes
- 1 c. coconut
- Mix in large bowl with electric mixer on medium speed the granulated sugar, brown sugar and shortening until light and fluffy.
- Add eggs and vanilla; mix well.
- In another bowl, sift flour, baking soda, baking powder and salt.
- Add flour mixture to sugar mixture and mix well with a wooden spoon.
- Add oats, bran cereal, corn flakes and coconut; mix well.
- Roll cookie dough to form walnut size balls and place on well-greased sheet.
- Flatten with fork and bake 12 to 15 minutes at 350u0b0.
- Cookies freeze well in a tightly covered container.
