Health Cookies

  1. Mix in large bowl with electric mixer on medium speed the granulated sugar, brown sugar and shortening until light and fluffy.
  2. Add eggs and vanilla; mix well.
  3. In another bowl, sift flour, baking soda, baking powder and salt.
  4. Add flour mixture to sugar mixture and mix well with a wooden spoon.
  5. Add oats, bran cereal, corn flakes and coconut; mix well.
  6. Roll cookie dough to form walnut size balls and place on well-greased sheet.
  7. Flatten with fork and bake 12 to 15 minutes at 350u0b0.
  8. Cookies freeze well in a tightly covered container.
