Chinese Pepper Steak
- 1 lb. round steak, sliced in thin strips
- 1/4 c. margarine
- 1/4 c. chopped onion
- 1 clove chopped garlic
- 3 large green peppers, thinly sliced
- 1/2 c. celery, cut in small pieces
- 2 to 3 c. water
- 1/8 tsp. pepper
- 6 beef bouillon cubes
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- 2 Tbsp. soy sauce
- 5 c. cooked rice
- Heat margarine in skillet.
- Add meat and fry until richly browned. Add onion, garlic, green peppers, celery, pepper and 2 to 3 cups water.
- Cover and cook 20 to 50 minutes or until meat is tender. Add water as necessary. During the last 10 minutes, add beef bouillon. Blend cornstarch with 2 tablespoons water and soy sauce.
- Stir into meat mixture and cook, uncovered, 5 minutes longer. Serve on rice.
