Quick English Currant Bread
- 5 level c. flour
- 2 c. light brown sugar
- 1/2 tsp. salt
- 1/2 lb. raisins
- 1/2 lb. currants
- 3/4 c. candied mixed fruit
- 2 1/2 c. buttermilk
- 1/2 lb. margarine
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 heaping tsp. baking powder
- 1 level tsp. baking soda
- 2 eggs
- Cream sugar and margarine.
- Add eggs.
- Combine flour, salt, spices, baking powder and baking soda.
- Add raisins, currants and candied fruit.
- Add buttermilk alternately with flour mixture. Make as moist as fruit cake.
- Pour into 2 loaf pans, greased and lined with waxed paper.
- Bake in a 350u0b0 oven for 1/2 hour, then at 300u0b0 for last half hour.
- Cool on rack.
- Wrap in foil and store in refrigerator.
