Shrimp And Veggie Casserole
- 1 (16 oz.) frozen vegetable mix (broccoli, cauliflower & carrots)
- 2 Tbsp. butter
- 1 lb. fresh shrimp, shelled and deveined
- 2 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. tarragon
- 1/2 c. dry bread crumbs
- 2 Tbsp. grated Parmesan
- 2 Tbsp. butter, melted
- Cook vegetables according to package directions, drain. Place in an ungreased 1 1/2 quart baking dish.
- Melt 2 Tbsp. butter in skillet, add shrimp, garlic, salt, and tarragon.
- Cook and stir until shrimp is done.
- Add shrimp to baking dish of vegetables. Stir to combine.
- In small bowl, combine bread crumbs, Parmesan, and 2 tablespoons melted butter.
- Sprinkle over shrimp mixture. Broil for 1 to 2 minutes or until browned.
- Serve immediately. Serves 4.
