South-Of-The-Border Soup
- 3 Tbsp. butter, divided
- 1 lb. ground beef
- 1/2 lb. chorizo or kielbasa sausage, sliced
- 1 c. chopped onions
- 1 c. dried carrots
- 3 garlic cloves, minced
- 2 cans (13 3/4 or 14 1/2 oz. each) beef broth
- 1/2 tsp. salt
- 1 can (16 oz.) whole tomatoes, undrained and coarsely chopped
- 3 c. water
- 2 cans (16 oz.) each golden hominy or whole kernel corn, drained
- 1/3 c. chopped fresh cilantro or 1/4 c. parsley and 1/2 tsp. ground cilantro
- 1/2 tsp. ground cumin
- 2 jalapeno peppers or green chilies, seeded and chopped
- In a heavy skillet, melt 1 tablespoon of butter.
- Add ground beef and cook, stirring to break into small pieces.
- Drain well. Set aside.
