Carmelized, Healthy Sweet Potato Medallions

  1. Cut sweet potatoes into 1/2-inch thick rounds & place into a bowl or plastic bag.
  2. Add grapeseed oil, salt and pepper, & STIR to completely coat the medallions.
  3. Place medalions on a parchment paper lined cookie sheet.
  4. COVER coated medallions with foil.
  5. Place in a *COLD OVEN* (This best caramelizes the medallions & brings out the natural sweetness.).
  6. Set oven to 400 u0b0 F and turn on the power.
  7. Cook for 30 minutes.
  8. Remove the foil.
  9. Turn medallions over.
  10. Bake another 15 minutes until tops are browned,caramelized to your preference.
  11. Remove from oven & serve immediately.
  12. ENJOY!
