Basil Zucchini Boats

  1. Cut zucchini in half lengthwise.
  2. Scoop out pulp, leaving shells intact; chop pulp.
  3. Place zucchini shells, cut side down, in a shallow baking dish.
  4. Add 1/2 cup water to dish.
  5. Bake at 350u0b0 for 8 minutes or until crisp-tender.
  6. Drain well; return shells, cut side up to baking dish. Saute pulp, red pepper, peas and garlic in olive oil over medium-high heat until pepper is crisp-tender.
  7. Remove from heat; stir in basil.
  8. Spoon mixture evenly into zucchini "boats."
  9. Sprinkle with Parmesan.
  10. Broil 6 inches from heat about 1 minute to thoroughly heat.
  11. Sprinkle with bacon.
  12. Serves 4.
