Vegetable Stir-Fry
- 1 3/4 c. broccoli florets
- 1 3/4 c. cauliflower florets
- 1 bunch chopped green onions
- 6 large mushrooms, sliced
- 1/2 large bell pepper, cut in strips
- 2 pkg. Hi-Energy Chicken Soup Supplements
- 1 to 2 tsp. ground ginger
- pepper to taste
- 2 tsp. safflower or canola oil
- Blanch broccoli and cauliflower for 3 minutes.
- Heat oil in skillet, then put broccoli and cauliflower in hot oil along with other vegetables.
- Stir continuously until peppers are tender but still crisp.
- Add soup and ginger and heat a few minutes longer. Heat until the soup and ginger are of liquid consistency.
- Makes approximately 3 servings.
- (Chicken breast, raw shrimp or turkey breast may be added to make one skillet meal.
- Chop and cook meat first, then add the vegetables.)
