No-Bake Blueberry Cheese Pie
- 1/2 c. sugar
- 2 Tbsp. cornstarch
- 3/4 c. cold water
- 1 pt. blueberries
- 1 pkg. light cream cheese
- 3 Tbsp. powdered sugar
- 1 tsp. vanilla
- 1 (8-inch) graham cracker pie crust
- Mix
- sugar and cornstarch in medium-size saucepan. Stir in water
- until blended.
- Add 1 cup of the blueberries.
- Stir over medium
- heat until mixture thickens and comes to a boil. Reduce heat
- and
- simmer 2 minutes, stirring constantly until berries release
- their
- juices.
- Remove
- from heat and stir in remaining berries.
- Cool
- totoom
- temperature. Beat cheese, powdered sugar and vanilla in bowl until blended.tpread over bottom of
- pie crust. Cover with berry mixture. Refrigerate 2 hours or until chilled.
