Sam Stern'S Chilli Con Carnie
- 450 -675 g chuck steaks, chopped or 450 -675 g minced beef
- 2 tablespoons sunflower oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 1 green chili pepper, seeded and chopped
- 1 bunch fresh coriander leaves, chopped
- 400 g red kidney beans
- 400 g chopped tomatoes
- 2 tablespoons tomato puree
- 2 teaspoons soft brown sugar
- 6 fluid ounces chicken stock or 6 fluid ounces water
- 1 cinnamon stick
- 1 red pepper, seeded and chopped
- lime juice
- salt and pepper
- preheat the oven to 180c/350f/gas 4 if baking. heat half the oil in a large casserole dish. tip in the steak(chopped small) or mince. turn quickly till brown.
- lower heat. add rest of oil onion, garlic chillies and coriander. cook for a few minutes until soft.
- add the beans tomatoes, tomato puree, sugar, stock or water and the cinnamon stick. stir. and bring to boil.
- reduce heat. cover. simmer very gently for 1 hour, stirring occasionally. add a splash of water if needed.
- add the pepper and stir. cover and simmer it gently for 40 minutes.
- taste. season with salt and a squeeze of lime.
