Steak And Potato Bake
- 2 lb. potatoes, sliced 1/4-inch thick in cold water
- 2 lb. lean round steak
- salt and pepper
- 1 medium onion, sliced
- 1/4 lb. small mushrooms
- 2 bouillon cubes
- 1 1/2 c. boiling water
- 1 1/2 c. tomato juice
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 2 Tbsp. parsley, chopped
- Peel, slice potatoes 1/4-inch thick.
- Cover in cold water. Cut meat into serving size pieces.
- Sprinkle with salt and pepper. Sear meat on both sides in hot skillet.
- Place meat in large casserole dish.
- Top with potatoes, onions and mushrooms. Dissolve bouillon cubes in boiling water.
- Combine with tomato juice, salt, pepper, oregano
- and parsley.
- Cover and bake in 350u0b0 oven for 1 hour and 15 minutes or until meat and potatoes are tender.
