Deviled Eggs
- 6 eggs, hard-boiled and peeled
- 1/2 tsp. mustard
- salt and pepper to taste
- 2 tsp. pickle relish
- 1 to 2 Tbsp. mayonnaise
- 1 c. rice
- 1 can water
- 1 Tbsp. butter
- 1 can beef consomme soup
- 1 medium onion, chopped
- 1/4 tsp. black pepper
- 4 large Irish potatoes, cooked
- 1/2 c. chopped onion
- 3 eggs, hard-boiled and chopped
- 1/2 to 1 c. mayonnaise
- 1/2 c. chopped celery
- 1/4 c. chopped bell pepper
- 2 Tbsp. sweet pickle relish
- salt and pepper
- Peel and cube potatoes.
- Gently fold into all other ingredients.
- Add 1/2 cup mayonnaise and stir, adding as much as you need to make it the consistency you want.
- Add salt and pepper to your taste.
- Chill 1 hour before serving.
- Serves 6.
