Skillet Turkey Lasagna(Serves 4)
- 10 oz. ground turkey
- 1/2 c. chopped onions
- 1/4 c. water
- 1 1/2 c. skim Ricotta
- 3 oz. uncooked egg noodles, not pasta
- 1 c. canned tomato sauce
- 1 c. canned tomatoes
- 1/4 c. water
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1 tsp. oregano
- 2 Tbsp. plus 2 tsp. Parmesan
- Brown turkey with onions in a nonstick 10-inch skillet.
- Add 1/4 cup water.
- Then add the tomato sauce, tomatoes, the other 1/4 cup water, the seasonings and Parmesan, the Ricotta and the noodles.
- Cover and cook, stirring occasionally, until the noodles are tender.
- Sometimes, I add mushrooms or chopped green pepper. Approximately 330 calories per serving.
