Seafare-Florentine Bake
- 2 lb. fish fillets (perch, flounder, haddock, pollock)
- 1 tsp. salt
- 1/2 tsp. onion powder
- 1/2 tsp. pepper
- 1 (10 oz.) can condensed Cheddar cheese soup
- 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
- 2 c. Bisquick
- 1/3 c. Parmesan cheese
- 1 c. milk
- 2 eggs
- Preheat oven to 350u0b0.
- Arrange fish in greased 13 x 9 x 2-inch baking dish. Sprinkle with salt, onion powder and pepper.
- Add 1/3 cup milk or water to can of cheese soup and stir. (Will spread easier.)
- Spoon over fish. Top with spinach. Beat remaining ingredients about 1 minute or until almost smooth.
- Pour over spinach. Bake, uncovered, about 40 minutes or until top is golden brown.
- Remove from oven and let stand 5 to 10 minutes before serving.
