Zucchini Pizza
- 3 1/2 c. zucchini (4 medium)
- 2 eggs, beaten
- 1/3 c. flour
- 1/2 c. grated Parmesan cheese
- 1/2 c. grated Mozzarella cheese
- salt and pepper to taste
- small amount olive oil
- 8 oz. tomato sauce
- 1 c. grated Mozzarella
- dried oregano
- any other toppings you would like
- Let the lightly salted zucchini stand 15 minutes.
- Squeeze out the excess moisture.
- Combine zucchini with 2 beaten eggs, flour, Parmesan, 1/2 cup Mozzarella and a little salt and pepper to taste. Spread this mixture into a greased baking pan.
- Bake in preheated 350u0b0 oven for 20 to 25 minutes or until the surface is firm and dry.
- Spread a very small amount of olive oil over the surface and broil 5 minutes.
