Microwave Stuffed Bell Peppers
- 4 medium bell peppers
- 1 small onion, finely chopped
- 1/2 c. saltine cracker crumbs
- 3/4 tsp. garlic salt
- 1/3 c. ketchup
- 1/2 tsp. thyme
- 1/2 tsp. Italian seasoning
- 1/8 tsp. crushed red pepper
- 1 1/4 lb. ground round (85% lean) or ground turkey
- 1 (14 oz.) can stewed tomatoes with their juice or 1 can Ro-Tel tomatoes
- Slice tops off peppers and remove seeds.
- Stand peppers up in a 9-inch square microwave safe dish.
- In a medium bowl, combine onion, cracker crumbs, ketchup, garlic salt, thyme, Italian seasoning and red pepper.
- Add ground meat and mix well.
- Stuff peppers with meat mixture, dividing evenly.
- Pour tomatoes or Ro-Tel with their juices around peppers.
- Cover tightly with microwave safe plastic wrap.
