Beef With Cashews(Chinese)
- 1 lb. beef rump steak, trimmed
- 4 Tbsp. vegetable oil, divided
- 1/2 c. water
- 4 tsp. cornstarch
- 4 tsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. oyster sauce
- 1 tsp. Chinese chili sauce
- 8 green onions, cut into 1 inch pieces
- 2 cloves garlic, crushed
- 1 piece fresh ginger (1 inch square), pared and finely chopped
- 2/3 c. unsalted, roasted cashews
- Cut beef across grain into thin slices about 2 inches long. Heat 2 tablespoons vegetable oil in large skillet over high heat. Stir-fry 1/2 of the beef until brown; 3 to 5 minutes.
- Remove and set aside.
- Repeat with remaining beef.
- Combine water, cornstarch, soy sauce, sesame oil, oyster sauce and chili sauce in small bowl; mix well.
- Heat remaining 2 tablespoons vegetable oil in pan over high heat.
- Add onions, garlic, ginger and cashews.
- Stir-fry 1 minute.
- Add meat and cornstarch mixture.
- Cook and stir until liquid boils and thickens.
