Fiesta Crepes En Casserole
- 1 lb. ground beef
- 1/2 c. finely chopped onion
- 1/2 c. finely chopped celery
- 1 (17 oz.) can cream-style corn
- 2 (8 oz.) cans tomato sauce
- 1 (1 1/2 oz.) envelope taco mix seasoning
- 4 oz. Cheddar cheese, shredded
- 1/3 c. sliced ripe olives (green or black)
- 1 c. flour
- 1/2 c. yellow cornmeal
- 1 1/2 c. milk
- 3 eggs
- dash of salt
- oil
- Brown beef, onion and celery in frying pan. Drain. Stir in corn. Combine tomato sauce and taco mix in separate bowl, stirring to blend. Add 1 1/3 cups of tomato sauce mixture to meat and corn, mixing well. Spoon 2 tablespoons meat mixture onto each cornmeal crepe and roll to enclose filling. Spread remaining meat mixture in a 13 x 9-inch baking dish.
- Place crepes, seam side down, on top of
- meat mixture. Spoon remaining tomato sauce mixture over crepes.
- Bake in a 375u0b0 oven for 20 minutes. Serves 10.
