Lasagna Burritos
- 1 lb. ground beef
- 2/3 c. mild taco sauce
- 3 Tbsp. taco seasoning mix
- 1/2 c. water
- 1 (16 oz.) can refried beans
- 6 curly edge lasagna noodles, cooked to firm stage, drained and spread out on paper towels
- 2 c. (8 oz.) shredded Cheddar cheese
- Brown meat and drain well.
- Stir in seasoning mix and water. Simmer until thickened (few minutes).
- Stir in refried beans. Spread about 1/2 cup mixture over each noodle.
- Sprinkle each noodle lightly with Cheddar cheese.
- Roll up noodles carefully, so filling does not ooze out.
- Spread 1/4 cup taco sauce in microwavable dish before adding lasagna.
- Arrange seam side down in a prepared dish.
- Top with remaining taco sauce.
- Cover with vented plastic wrap.
- Microwave on High for 7 to 9 minutes (rotate dish after 4 minutes).
- Sprinkle remaining cheese on top.
- Cover about 5 minutes and let stand until cheese has melted, but still looks shredded.
