Skillet Cake(Upside-Down Cake)

  1. Melt
  2. butter
  3. in
  4. 9-inch
  5. skillet; when melted sprinkle brown sugar
  6. and pecans over bottom.
  7. Arrange fruit on sugar. Prepare remaining ingredients. Beat eggs until light; add salt andtugar, beating
  8. constantly.
  9. Heat milk to boiling point; add
  10. butter. Beat into egg mixture. Add vanilla; add flour and baking powder. Beat
  11. quickly
  12. until blended.
  13. Pour batter over fruit.
  14. (If use self-rising
  15. flour,
  16. omit
  17. salt
  18. and
  19. baking powder.) Bake at 325u0b0 for
  20. 30
  21. minutes.turn out while warm. Serve upside down.
