Fire House Fowl(Better Known As Pigs And Chickens)
- 8 links sweet or hot Italian sausage
- 12 chicken wings
- 12 legs
- 8 large red potatoes (2 1/2 to 3 lb.), unpeeled
- 6 green peppers
- 2 large Spanish onions
- 4 cloves garlic
- 1 Tbsp. oregano flakes
- 1 Tbsp. basil flakes
- 1/4 c. olive oil
- Cube the potatoes 1 inch square, slice green peppers lengthwise.
- Slice the large onion lengthwise.
- Dice the garlic and mix in a large bowl along with the peppers, potatoes, onion, oregano, basil and olive oil.
- When well mixed, place in a large roasting pan.
- Place the chicken and sausage evenly over the vegetables.
- Cover with aluminum foil and place in oven for 45 minutes at 350u0b0.
- At 45 minutes, uncover and cook for 20 to 30 minutes more or until chicken and sausage brown.
- Serves 6 to 8 firemen!
