Chinese Chicken Salad
- 2 Tbsp. soy sauce
- 1 Tbsp. salad oil
- 1 Tbsp. dry sherry
- 1 clove garlic, minced
- 1/4 tsp. ground ginger
- 1/4 tsp. Chinese 5 Spice
- 2 1/2 to 3 lb. broiler/fryer, cut in half
- 1/4 c. sesame seed
- 6 c. shredded iceberg lettuce
- 3 green onions with tops, thinly sliced
- 1/2 c. coriander, chopped
- 1/2 c. salted cashews or peanuts, chopped
- 2 to 3 c. deep-fried bean threads or rice stick
- Lemon Dressing
- salt and pepper
- Mix first 6 ingredients, rub over chicken halves.
- Place chicken, skin side up, in a pan.
- Pour over any extra soy mixture. Baked at 400u0b0 until done.
- Skin and bone chicken and cut into thin strips.
- Spread sesame seed in a pan over low heat, shaking until seed turns golden and begins to pop.
- In a salad bowl, mix chicken, lettuce, onion, coriander, sesame seed and nuts.
- Add dressing and noodles.
