Irish Soda Bread

  1. Chop
  2. raisins
  3. coarsely,
  4. if desired. Resift flour with baking powder, baking soda, salt and sugar.
  5. Add caraway seed. Cut
  6. in shortening until in fine pieces.
  7. Make well in center. Pour in buttermilk and add raisins.
  8. Mix lightly to moderately soft dough.
  9. Turn out on floured board and knead gently a few strokes. Shape into round ball.
  10. Put into greased 8 or 9-inch layer
  11. cake pan.
  12. Cut
  13. loaf crosswise into quarters about 2/3 way
  14. through dough
  15. with
  16. sharp knife.
  17. Brush top with melted butter and sprinkle with sugar.
  18. Bake at 350u0b0 for 40 minutes.
