Taco Pie
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 envelope (1 1/2 oz.) taco seasoning mix
- 1 can (4 oz.) chopped green chiles, drained
- 1 1/2 c. milk
- 3/4 c. Bisquick
- 3 eggs
- 2 medium tomatoes, diced
- 1 c. Monterey Jack or Cheddar cheese, shredded
- sour cream (if desired)
- shredded lettuce
- Grease 10-inch pie plate.
- Preheat oven to 400u0b0.
- Cook beef and onion in skillet over medium low heat, stirring to crumble until brown.
- Drain.
- Stir in seasoning mix.
- Spread in pie plate; sprinkle with chiles.
- Beat milk, Bisquick and eggs until smooth (15 seconds in blender or 1 minute with hand mixer).
- Pour into pie plate.
- Bake 25 minutes.
- Top with tomatoes; sprinkle with cheese.
- Bake 8 to 10 minutes more or until knife inserted to center somes out clean.
- Cool 5 minutes.
- Serve with sour cream (optional), tomatoes, shredded lettuce.
- Makes 6 servings.
