Refrigerator Cheese Cake
- 1 large can evaporated milk
- 1 (3 oz.) pkg. lime jello, dissolved in 1 c. boiling water
- 1 (8 oz.) pkg. cream cheese
- 1 c. white sugar
- juice of 1 lemon
- 1 tsp. vanilla
- 2 c. graham cracker crumbs
- 3 tsp. sugar
- 1/4 lb. butter
- Mix graham cracker crumbs and melted butter and sugar and blend well.
- Line bottom of 9 x 13-inch pan with 2/3 of crumbs. Reserve rest of crumbs to sprinkle on top.
- Cream the cream cheese, 1 cup sugar, lemon juice and vanilla until smooth.
- Beat the evaporated milk in a large bowl (milk and bowl should be well chilled), until stiff peaks form.
- Fold in cream cheese mixture and jello and blend well.
- Pour into crumb lined pan and sprinkle remaining crumbs on the top.
- Cover with foil and chill at least 8 hours before serving.
