Fried Bean Burritos
- 3 Tbsp. Olive Oil
- 16 oz. Can Corn (Drained)
- 1 Red Bell Pepper, chopped
- 1/2 Red Onion, chopped
- 3 Cloves Garlic, chopped
- 16 oz. Can Black Beans
- 16 oz. Can Garbonzo Beans (Drained)
- 1 Can Jalapenos(Chopped)(Can size depending on degree spice you like)
- 2 Tbsp. Lime Juice
- 1 Tbsp. Chili Powder
- 1 Tbsp. Red Pepper
- 1 tsp. Oregano
- 1 1/2 tsp. Cumin
- 1. Brown the corn with the olive oil, do not burn or the corn will pop and make a mess.
- Add the red pepper, onion, garlic and brown lightly. 2. Add the beans, jalapenos (if desired), lime juice, and spices.
- Bring to a light simmer. 3. Warm large flour tortillas in a microwave.
- While warm roll burritos on plate. Cover with sharp cheddar cheese and bake in oven or microwave to melt cheese.
- Serve with chips and a cold Corona beer.
